I grilled the chicken ( which I make sure is thin cutlets...)In a pan.. saute garlic ( 1 clove) deglaze with 1/2 white wine, then add goat cheese...depending on whether you have the crumbled or goat cheese I add about a handful of the crumbles... or 1 slice of goat cheese off the log ( dice it up as best you can to help with even melting) once melted ( on low heat) add in diced sundried tomatoes ( 1/4 cup is good ) add salt and pepper... simmer 2 minutes to heat through tomatoes and serve over grilled chicken.
